“Linguini” (Spaghetti Squash) Alla Vongole

There are sooooooo many recipes out there for Linguini Alla Vongole (clams) that I didn’t want to add yet another recipe that is so close to the ones already out there, so I decided to create a low carb “Linguini” (Spaghetti Squash) Alla Vongole version!"Linguini" (Spaghetti Squash) Alla Vongole | www.4hourbodygirl.comOne of the fastest ways to lose weight, or lose fat particularly is to swap out your white flour, white sugar foods and replace them with healthy vegetables. Thank goodness for spaghetti squash! Not only is it a low carb food, it tastes delicious when accompanies with the right sauce. The best and easiest way I’ve found to prepare spaghetti squash is by following these directions:

  1. To prepare spaghetti squash, heat your oven to 375 degrees.
  2. While it’s heating, brush the inside of each half with olive oil and sprinkle with coarse.
  3. Place parchment paper on the sheet and put cut sides down, then put the sheet in the oven.
  4. Bake for about 40 minutes, or until you can easily pierce it with a fork.

While that’s cooking prepare everything according to the recipe at the end of this post.

I could hardly wait! I started just tasting, okay eating the broth like it was soup, before I even added it to the spaghetti squash. The garlic, sautéed in alive oil with the red pepper flakes and the wine simmering with the clam broth and parsley, was addictive, and the smell of this dish had my neighbors asking me what I had for dinner last night!

You may be tempted to leave out the bacon and the butter to make this a lighter dish, but I urge you not to. That’s what gives this dish it’s flavor. Remember what Tim Ferriss explains in his 4 Hour BODY book, is that it’s not calories in, calories out, it’s how our bodies process the foods we eat. So 1200 calories of mayonnaise, vs. 1200 calories of spinach, vs. 1200 calories of chicken will be processed differently by our bodies and will affect our metabolisms differently.

LINGUINI” (SPAGHETTI SQUASH) ALLA VONGOLE

Ingredients
  1. 2 lbs fresh Manila clams (Let them sit in cold salted water for 30 minutes to an hour before using)
  2. 1 jar (not can) of clams in clam juice
  3. 2 slices of bacon, chopped into bits
  4. 8 sprigs of asparagus, chopped into 1 inch pieces
  5. 4 cloves garlic, sliced thinly
  6. 1 teaspoon red pepper flakes
  7. 1 tablespoon butter
  8. 1/4 – 1/2 cup olive oil plus extra for drizzling
  9. 3 – 4 tablespoons fresh parsley, chopped
  10. 1/2 – 3/4 cup of dry white wine
  11. 1 lemon - juiced
  12. 1 spaghetti squash, cut in half
Instructions
  1. Heat oven to 375 degrees.
  2. Brush the inside of each half of the spaghetti squash with olive oil and sprinkle with coarse salt and freshly ground black pepper.
  3. Place cut sides down on a rimmed baking sheet and put sheet into the oven.
  4. Bake for about 40 minutes, or until you can easily pierce the squash with a fork.
  5. In a substantial skillet heat olive oil on medium heat.
  6. When the oil is warmed up, add the red pepper flakes and the bacon.
  7. Turn the heat down a bit before adding the garlic.
  8. Drain the clam juice into the pan and add the wine. Heat it to the point of boiling. After an around 2- 3 minutes, the fluid will diminished a bit. Include a large portion of the parsley and the juice of the lemon and season to taste.
  9. Include the fresh clams, and the asparagus, cover the skillet and steam on medium for around 3 – 4 minutes or until the they open up. It shouldn't take any longer than this for every one of them to do as such. Dispose of any that do not open. Add the clams from the jar, and let them warm up in the sauce for a bit. I really do not like using canned clams because they have a tinny taste.
  10. Include the spaghetti cooked squash and toss evenly with the sauce.
  11. Drizzle additional olive oil after plating it Trim with a lemon wedge and cleaved parsle
